I think the title is a bit wrong, what stone is it and a fast set would be my choice

One Day

Cumulative weight will be high so i think hb is a good choice of substrate. Adhesive-wise, i would use whatever you like and trust. It's not a particularly sensitive stone but always safer to use a rapid set.
Personally I'd use tilemaster semi-rapid.

Hi as the stone is relatively light in colour we'd recommend Keraquick White adhesive. For further info you can visit products - http://www.mapei.com/GB-EN/Products-for-Ceramics-and-Stone-Materials/Cement-based-adhesives/KERAQUICK-S1 or call our Technical Services Team directly on 0121 508 6970 (ext 2) for advice. Hope that helps. :)

I think it depends how capable the man is with laying tiles , or these interlocking mosaic.
Id use white slow set or as impish says semi rapid (tilemaster would be my choice)

Tilemaster standard set white . It's made for the job. Trust me 42 years experience and tile master is the way forward
