It looks like Carrara and Nero Marquina to me.

Marble etches and stains quite easily. When it's polished it's less pourous but it shows etching and scratching much more.

A honed marble is more pourous than polished naturally but it shows etching and scratching less.

Acid washed is an alternative to honed, effectively an acid has been used to etch the surface of the marble completely to give the effect it's centuries old and worn so it won't show any further etching. The downside is it's very porous and a little uneven. Think "antique" finish.

I have 30mm Honed Carrara kitchen worktops which were stain stopped with Lithofin. They etch and stain slightly but I find that part of the character of having marble so I can live with that.
