Do you think, from floor to ceiling, 12mm thick plywood plus 12mm thick cement board (e.g. Hardiebacker type board or similar) plus metro tiles is a tolerable weight to be attached to timber stud?

Wall would be 1 metre wide by 2.3 metre high

Why not put cement board straight on studs or if you need the ply for some reason use jackobord it's lighter or just put jackobord straight on studs

I was informed by a bathroom installer that over time removing/placing a hand shower on a tanked plasterboard wall on a daily basis, the support which the wall provides to the hand shower will be weakened.

I assumed that cement board, over time, would be similarly weakened at the point where a hand shower is attached and that 12mm ply (behind the cement board) would offer a firmer base for the hand shower and also for shelving at the top.

You can ply or extra timber studs between the studs where you need extra support rather than ply the whole wall .

Put timber between the studs where required with extra noggins where needed. Then board the whole area with jackoboard or anther brand of insulation board. 12 or 20mm thickness depending on stud spacing. Tape the joints and it’s a waterproof wall

There will be a number of 15mm diameter pipes, floor-to-ceiling, within this stud. If this makes it difficult/impossible to install horizontal noggins within the stud, then would floor-to-ceiling 12mm ply+12mm cement board + metro tiles be an acceptable weight for timber stud?

To answer your question, yes! If the stud is sound then it will be able to take all that weight. If your'e intent on using this build up then tank the complete wet area not just the joints.

Cement board is not water proof and there is no point using it in this case when a foam core board is more suited all round! You seem intent on this method tho as you have asked about 3 times!

It seems to be difficult to obtain the more "exotic" material boards in my location. Even Hardiebacker, here, is only available at Topps & B&Q.

Apparently, there are no stockists of Jackoboard in NI.

The cement board would be tanked.
