When doing steps do you do riser,,tread,riser,tread, or all the risers then the treads?

when you do your risers, make sure they are perfectly straight to avoid any overhang from the treads

I normally string a line down the steps to make sure that when I do the risers, they are all in line and the treads just sit in perfectly

you could snap a string line across the centre of each step (across each step, one side to the other) and measure an equal distance form the line when fixing every tile to the risers. This will ensure that you are fitting square and parralel/
straight to assist in avoiding any overhang when your steps are in bad nick.

would personally prefer to take 20mm or something off the second end tiles than end up with sill cuts at the end if possible,works better with quarries and can not always be possible with other types

You can use a tring or just mark out on all steps using a flat square.
Check all steps with level/ straight edge for flatness and level
Check all treads and risers for discrepancies in size and to see how square they are and to establish whether or not they all run parallel, measure each side and the middle of every step to see if the are the same size (if not this is were the centre lines come in as you can fix tiles on the risers at an equal distance to the centre line that runs across the tread)
Butter all tiles and lay a slurry onto steps with flat trowel to leave no voids for water to get into, hopefully eliminating the chances of the tiles delaminating in the cold weather.
