What is the substrate of your uneven walls mate, Brick, plaster?

3 walls are brick and one wall plaster

dot and dab will be ok on all four walls if the plaster is sound, hack it off if any doubt

Do i need to tape the joins and prime first?

no need to tape but prime the plasterboard if you are using cement based adhesive!

Don't prime with PVA but follow the manufacturer's instructions

as posts above, but more than likely, plasterboards will be "tapered edge", so make sure the edges are filled with adhesive, flush to the plasterboard face

You need 7-10 days for board adhesive to get a good hold and dry ...

A plasterer i work with, puts plaster board up, with the tapered edge to the back if he's tiling it, makes it easier to get it level?

Why not buy square edged board, the back of board british gypsum don't even recommend plastering on that side

Maybe he's talking about a different kind of board, but he says one side is for plastering and the other is for tiling. Im not an expert.

No, one side is for plastering and tiling the other side is for attaching to the wall, both sides was a long time ago

recommended time for building on concrete footings is something like 28 years till it reaches it's "half life" Tony, tbh who can wait that long?
