Hi there, when your re-grouting a shower cubile, how much grout should you remove?

I would say at least 2/3 of the depth, all if possible. You need to have sufficient room for the new grout to get a grip of the tiles.

As grumps has said almost all of it, be careful in wet areas as there might be waterproof membrane behind the tiles which cannot be punctured.
