I'm sure the Technical Team (0121 508 6970 - OPTION 2) could give you a brief overall descirption of the differences, to help you are PDF datasheets - KERAQUICK and LATEXPLUS, S2 Adhesive when mixed which should give an insight to polmyer adhesiveS. Also, below a technical from the TTA which a few classifications - GOOD LUCK! (To search more, type in the search 'S1 S2 ADHESIVE' - google comes up with loads)
