The polishing process can open up microscopic pores in the polished surface. These pores can grab and hold onto grout and dirt. An good impregnating sealer helps to prevent this

Turned up site, it's tiles i've used numerous times, sealing never been an issue.

    Sparkly polished Topps numbers.

I'll seal, but sometimes you've got to wonder.

This situation is similar to Polished Porcelain. As Grumpy says, it is generally required to stop dirt keying to the microscopic pores. I would also receommend sealing before grouting, especially if you are using a light grout on dark tiles or vice versa
