If they are hand made, you will probably need 10/15mm joints. As pjc, pics would help.

310 x310 dont know of oct that size or might be more likely they would be Saltillo or a hand made Spanish so shouldn't be that bad

did a load of terracotta last year hand made 200x100 bricks all diff sizes , are the customer aware of what they have bought , they look great when down we sealed with linseed oil , 10 mm joint , and grouted with ardex coco bean looked brill , found the ardex awsome to work with no slumping and so easy to clean off

I have often had to give slate a 10mm+ joint, not down to choice when the tolerance is that wide.
I hope the customers know what these are going to look like and not saved themselves a few quid buy picking them up on line but want a flat and level floor.

Terracotta always gets a wide joint, so unless you have never laid it before then you cannot say it will look wrong

Sounds Mexican, will look the dogs when done, will need a large joint.
Do they have a shamfered edge?

as long as you explain everything to the customer i.e. wide joints, bowed tiles etc. if they don't like it you're covered.

ah but dave it does not matter whitch or what tile it is when you have been in the job for forty years you have not only fixed a lot of tiles but you tend to get afeel for what looks right and what doesnt it is up to the customer what they want at the end of the day we are only here to advise with a wealth of experience terracotta might i say is a tile that i have fixed many times over but is only my opinion
