I am thinking of putting white floor tiles in every room in my holiday home in Spain.

Are they high maintenance? i.e show lots of dirt etc

Does it look good?

What colour grout?

White tiles are lovely looking down,.
You will see every bit of dirt unless it's white,lol.
Grey grout actually suits white tiles very well and is low maintenance.
If you wanted a superb white look and not much dirt comes in then a good quality white epoxy grout or similar would work well IMO.

Just finished a 400m2 floor in 600x600 polished white porcelain with silver grey grout. Looks mint but definately the wrong choice IMO as they are in a textile showroom that has loads of people walking through every day. Think he'll live to regret choosing them......

I personally like my floors to be Darker (even just a shade) than my walls, just think it looks better.

They will have White in the reception areas of Hotels as it's a 'cool' colour and they are often in dark internal locations.
But the reflection from the sun makes them very hard on the eyes and hence the general more muted beige colours are common.

The ground floor in Debenhams in Leeds has white polished porcelain, with grey grout. I thought my eyes were deceiving me when I first saw them, White? Department Store? What?. Anyway after a year down they still look like new and I'm guessing you won't have as many people through your doors as they do. As Timeless says the reflection may be very bright but then again they will look crisp and fresh (If kept immaculately clean). Go for it!

This is a personal choice , light tiles can make an area look/feel bigger and we all have our own tastes.

Personally I think it could look very smart in white.

yes will blind you in the sun and show ever little spec and you will need these IMO

i think white tiles look fine might be an idea to tp put a border tile in to break it up a little maybe a black border or a mosaic border tile , i would also probs have it on diamond pattern , just a thought
