Question Movement Joints

Hello All,
I have recently completed the Diamond Training Course in west Sussex and have completed several job specifications. The main grey area i have is movement and expansion gaps, I currently leave 2/3mm gap from ceiling and in the vertical corners of the room and fill with a good quality sealent. I also run translucent sealent where tile meets tile at floor level.
Is this the correct practice?
Is this only really needed in new builds?
I have spoken to some "Old school" tilers in my area who grout everything and i would like to find out the correct medium.

Any thoughts? Thank you.
