Default Grouting Uneven Stone Mosaic

Hi everyone, first post here. Been lurking up to now but really informative forum, so thanks!

I've just finished tiling my kitchen wall with slate mosaic tiles. They look great but have a very uneven appearance (part of the character i guess) and there is a big difference in depth between some adjacent tiles (upto about 3mm in some places) My question is whether there are any techniques you can advise of to ensure an good finish. I have a grout float, sponge etc. Is it just a case of liberal application then a bit more attention for the uneven bits with the sponge.
